Most Beaujolais is made by carbonic or semi-carbonic maceration, where whole berries ferment intact before pressing. That is what gives the wines their burst of red cherry, raspberry and violet, with famously supple tannins. The same method drives Beaujolais Nouveau, released on the third Thursday of November to mark the harvest and meant to be drunk within months. Should Beaujolais be served chilled?
Yes, lightly. Half an hour in the fridge, or ten minutes in an ice bucket, is enough. It is one of the few reds that genuinely improves with a chill.
Does Beaujolais age, or should I drink it young?
Most is best in its first few years, Nouveau sooner still. The exceptions are the top Crus, especially Morgon and Moulin-à-Vent, which can reward five to ten years in the cellar, closer to a fine Burgundy.
What food pairs with Beaujolais?
Its freshness and gentle tannins make it a natural all-rounder: charcuterie, roast chicken, duck, pâté, even grilled salmon. It also suits mushroom dishes and lighter vegetarian plates.
