The Chardonnay and Chardonnay Rosé for Cuvée Georges 2022 come from the Thillardon family’s vineyards in southern Beaujolais, rooted in blue marl soils that are known for imparting tension, salinity, and a pronounced mineral character to white wines. The grapes are farmed with great care—typically following low-intervention, sustainable to organic principles—and harvested by hand to ensure optimal ripeness and fruit health. In the cellar, the wine undergoes a gentle vinification, with fermentation and a long élevage taking place entirely in used wooden barrels, avoiding overt oak flavor while building texture and depth. Extended time on the lees and minimal interventions allow the wine to develop its crystalline structure and layered, soil-driven profile.

Cuvée Georges 2022 is a versatile food wine that shines alongside delicately prepared dishes where subtlety and texture matter. Think grilled or poached white fish, scallops, oysters, and shellfish, as well as roast chicken with herbs, vegetable risottos, and simple dishes featuring spring vegetables, fennel, or leeks. Its saline, mineral finish also makes it an excellent partner for soft-rind cheeses and fresh goat’s cheese. Serve at around 10–12°C (50–54°F) to balance freshness with aromatic expression. A brief decant of 20–30 minutes, or simply pouring it into large white wine glasses, will help the wine open up and fully reveal its floral and mineral nuances.
