Domaine Thillardon’s Cuvée Georges 2022 is a finely etched, soil-driven Chardonnay from the lesser-known white side of Beaujolais. Crafted from Chardonnay and rare Chardonnay Rosé grown on blue marl in the southern part of the region, it offers a quietly intense, mineral expression rather than overt fruit. Long élevage in used barrels and guidance from a renowned Jura winemaker have helped shape a wine that is at once refined, textural, and deeply tied to its terroir.

Tasting Notes
In the glass, Cuvée Georges 2022 shows a pale straw to light gold hue, with a slight translucence that hints at freshness and finesse. The nose opens gently with subtle citrus notes—think lemon zest and a touch of ripe lime—woven with white flowers, a whisper of almond, and a distinct stony, almost chalky undertone. On the palate, the wine is clean and finely textured, with a supple, almost waxy mid-palate that never feels heavy. Bright acidity carries flavors of citrus peel, green apple skin, and delicate florals, supported by a pronounced mineral backbone and a distinctly saline, savory finish. The impression is one of precision and quiet energy, with the blue marl soils speaking more clearly than any overt fruit. The Chardonnay and Chardonnay Rosé for Cuvée Georges 2022 come from the Thillardon family’s vineyards in southern Beaujolais, rooted in blue marl soils that are known for imparting tension, salinity, and a pronounced mineral character to white wines. The grapes are farmed with great care—typically following low-intervention, sustainable to organic principles—and harvested by hand to ensure optimal ripeness and fruit health. In the cellar, the wine undergoes a gentle vinification, with fermentation and a long élevage taking place entirely in used wooden barrels, avoiding overt oak flavor while building texture and depth. Extended time on the lees and minimal interventions allow the wine to develop its crystalline structure and layered, soil-driven profile.

Food & Serving
Cuvée Georges 2022 is a versatile food wine that shines alongside delicately prepared dishes where subtlety and texture matter. Think grilled or poached white fish, scallops, oysters, and shellfish, as well as roast chicken with herbs, vegetable risottos, and simple dishes featuring spring vegetables, fennel, or leeks. Its saline, mineral finish also makes it an excellent partner for soft-rind cheeses and fresh goat’s cheese. Serve at around 10–12°C (50–54°F) to balance freshness with aromatic expression. A brief decant of 20–30 minutes, or simply pouring it into large white wine glasses, will help the wine open up and fully reveal its floral and mineral nuances.
