Originally from Galicia, I have worked for the past 15 years in fine dining establishments such as Scott's and Fera* at Claridge's Hotel in London, after I spent three years in Champagne at Racine** in Reims and at the Royal Champagne Hotel & Spa in Champillon. There I had the opportunity to get to know the region in depth by visiting growers and grande marques.
For the past five years I have been working in Copenhagen, first at Jordnær*** and, for the past four years, at Kadeau Copenhagen**.
