Description

Chavost Champagne Blanc d’Assemblage Brut Nature is a beautifully poised, non-vintage Champagne that lets its grapes and terroir speak without the influence of dosage. Crafted from Chardonnay, Pinot Meunier and Pinot Noir, it delivers a pure, dry expression that’s all about clarity, texture and energy. This cuvée reflects the growing movement in Champagne toward lower-intervention, terroir-driven wines, showcasing the region’s finesse in its most unadorned form.

Tasting Notes
In the glass, this Champagne shows a pale, luminous straw color with fine, persistent bubbles forming an elegant, lively mousse. The nose is precise and inviting, with notes of crisp green apple, lemon zest and white flowers layered over hints of brioche, chalky minerality and a touch of fresh almond. On the palate, Blanc d’Assemblage Brut Nature is bone-dry yet far from austere, balancing brisk acidity with a supple, creamy texture from extended lees aging. Flavors of citrus, green pear and stone fruit mingle with subtle red-fruited tones from the Pinot Noir and Meunier, followed by saline, chalk-driven nuances on the long, clean finish. Enjoyable now for its verve and freshness, it will continue to develop more brioche, nutty and honeyed complexity over the next 3–5 years.

Production
Sourced from carefully tended vineyards in the heart of the Champagne region, this cuvée draws on the classic trio of Chardonnay for tension and elegance, Pinot Meunier for aromatics and fruit, and Pinot Noir for structure and depth. The grapes are harvested by hand to ensure optimal selection of bunches in the vineyard, then gently pressed to preserve purity. Fermentation typically takes place in temperature-controlled vessels to retain freshness, followed by extended aging on the lees to build texture and complexity. As a Brut Nature, no dosage is added at disgorgement, so the final wine is a transparent reflection of its terroir, base wines and élevage.

Food & Serving
This is a highly versatile Champagne at the table, pairing beautifully with oysters, scallop ceviche, sushi and sashimi, as well as delicate white fish, goat’s cheese salads and light poultry dishes. Its linear profile and mineral backbone also complement salty tapas, charcuterie and tempura-style dishes. Serve well chilled at around 8–10°C (46–50°F) for maximum freshness; if you’re opening an older bottling or want to unlock more complexity, a brief 10–15 minutes in a decanter or a larger-bowled glass can help the aromatics unfold.

Producer
Chavost is a grower-focused Champagne producer based in the historic heartland of the appellation, drawing on small, carefully farmed parcels to craft characterful, terroir-forward wines. With a philosophy that leans toward minimal intervention and precision in the cellar, the domaine aims to highlight the natural expression of its Chardonnay, Pinot Meunier and Pinot Noir. While not one of the region’s large houses, Chavost has earned a following among Champagne enthusiasts for its thoughtful blends, focus on purity and texture, and its embrace of drier, low- or no-dosage styles that reflect the modern evolution of Champagne.

This is a great introduction to grower champagne. Chavost champagne is the collaboration of various vine growers who were tired of selling their grapes to the big houses and decided to come together and create a cooperative in Chavot-Coucourt.
