Domaine Tony Bornard’s 2015 Savagnin Arbois Pupillin Vin Jaune is a distinctive Jura white shaped by extended ageing under a veil of yeast, known as *sous voile*. Produced from Savagnin in the celebrated village of Pupillin, it offers remarkable depth, savoury complexity and the ability to mature gracefully for decades.

Tasting Notes
Deep golden in colour, this Vin Jaune opens with expressive aromas of toasted nuts, walnut, curry spice, dried flowers and preserved citrus, complemented by the characteristic oxidative notes of Jura’s sous-voile wines. The palate is dry, concentrated and finely structured, combining fresh acidity with flavours of walnut, almond, saffron, green apple and subtle saline minerality. Its long, persistent finish balances richness with energy. While already compelling, the wine has considerable ageing potential and can develop further complexity over many years when properly stored.

Production
The wine comes from the limestone- and marl-rich terroir around Pupillin, one of the Jura’s most distinctive villages. Made from Savagnin, it undergoes fermentation before being aged for the extended period required for Vin Jaune, resting beneath a naturally forming layer of yeast without topping up the barrels. This traditional maturation protects the wine while encouraging its signature nutty, spicy and savoury character. Vin Jaune is traditionally released in the distinctive 62 cl *clavelin* bottle, reflecting the volume lost during ageing.

Food & Serving
This is a classic partner for Comté, particularly well-aged examples, and works beautifully with Jura specialities such as chicken with morel mushrooms. It also complements lobster, crab, creamy mushroom dishes, saffron-seasoned preparations and aged hard cheeses. Serve lightly chilled at around 13–15°C. Decanting is optional: opening the bottle one to two hours before serving can help reveal its full aromatic range, although older bottles may be best tasted first and decanted only if necessary.
