Tasting Notes
The wine pours with a luminous golden hue and a fine, persistent mousse. On the nose, it opens with layered aromas of white flowers and mint, followed by more nuanced notes of smoke and white pepper.
The palate is strikingly balanced, with clear, expressive fruit and beautifully integrated acidity. It feels refined and complete, with enough structure and complexity to evolve gracefully over time. While already impressive now, it has the potential to age further and gain even more depth and nuance.
Production
Dom Pérignon 2008 is made from Chardonnay and Pinot Noir sourced from Champagne, France, where the chalk-rich terroir and cool climate help preserve freshness, tension, and aromatic precision. As with all Dom Pérignon wines, only a vintage cuvée is produced, with the final blend reflecting the character of the year. The wine spends a minimum of eight years aging in the cellars before release, allowing it to develop its signature balance and complexity.
Food & Serving
This Champagne is ideal with shellfish, oysters, caviar, sushi, delicate poultry, or refined dishes with creamy textures. Serve well chilled at around 8-10°C. Decanting is generally not necessary, though a brief opening in the glass can help the aromatics fully unfold.
