In the glass, this 2007 Shiraz typically presents a deep garnet core with a brick-tinged rim, reflecting its bottle age and careful cellaring. The nose leans into dark, sun-ripened fruit – think blackberry, plum and black cherry – layered with notes of dried herbs, licorice, cocoa, and a gentle smokiness, alongside the savoury, leather and earthy nuances that come with maturity.
On the palate, you can expect a full-bodied, generous wine, with softened, rounded tannins and a harmonious balance between fruit, spice and tertiary flavours. The dark berry and plum character is interwoven with hints of black pepper, dried violets, mocha and warm spices, leading into a long, savoury finish. At this age, the wine is likely at or near its peak, showing integrated structure and developed complexity. It should drink beautifully now, with potential to hold for a few more years under optimal cellaring, though further evolution will be more about subtle nuance than added power.
Production
The Greenock area of Barossa Valley is known for its warm, dry climate, ample sunshine and ancient, low-vigour soils that naturally restrict yields and intensify flavour – conditions particularly suited to Shiraz. Zitta Wines, founded by Angelo de Fazio in 2004, works with a clear nod to European traditions, focusing on careful fruit selection and minimal interference in the cellar. Grapes are typically harvested by hand at optimal ripeness, then destemmed and fermented in small batches to extract colour, aroma and structure in a controlled way. The wine is subsequently matured in oak (often a mix of new and seasoned barrels) to integrate tannins and add complexity, before being bottled for extended aging, allowing the distinct Greenock terroir and traditional winemaking approach to fully express themselves.
Food & Serving
This mature Barossa Shiraz is a natural partner for rich, flavourful dishes: slow-cooked lamb shanks, beef short ribs, grilled ribeye, venison stews or hearty Mediterranean casseroles. It also works well with aged hard cheeses and dishes featuring roasted root vegetables, mushrooms or savoury herbs like rosemary and thyme. Serve at around 16–18°C to highlight its complexity without accentuating alcohol warmth. Decanting for 30–60 minutes can help the wine open up and allow any bottle-aged notes to unfold, while also letting any natural sediment settle.

Zitta Wines was created in 2004 when Angelo de Fazio, whose roots lie in a Southern Italian winegrowing family, acquired the Barossa property and named it “Zitta” – Italian for peace and quiet.
