Crafted only in exceptional vintages and from the estate’s finest parcels, this Riserva is dedicated to the winery’s founder, Sergio Zenato, and stands as their flagship expression. The 2017 offers an opulent mix of dark fruit, spice and dried floral notes, wrapped in a structure built for long aging and slow contemplation.
Tasting Notes
In the glass, this Amarone Riserva is almost opaque ruby-garnet with a dense, inky core and a slight brick-tinged rim that hints at its concentration and maturity. The nose opens with tightly packed layers of black plum, blackberry and candied cherry, then gradually unfolds to reveal clove, star anise, dried rose petals, and a hint of green peppercorn and sweet tobacco.
On the palate, it is full-bodied, firm and commanding, with a deep core of ripe black fruits—sloe plum, black cherry liqueur and macerated berries—supported by powerful but polished tannins. Notes of cocoa, licorice, dried herbs and warm spice mingle with a vibrant streak of acidity that keeps the wine from feeling heavy. The finish is long, savory and slightly herbal, with a lingering echo of dried fruit and spice. In magnum, this 2017 has excellent aging potential: it is impressive now with a decant, but will continue to gain complexity and integration through 2035 and beyond.
Production
Sourced from Zenato’s top vineyards in the Valpolicella Classico zone near Lake Garda, this Riserva reflects a terroir of limestone- and clay-rich soils, good elevation and excellent ventilation—ideal conditions for concentrating flavor while preserving freshness. The classic Amarone blend is dominated by Corvina, with supporting roles from Rondinella and other local varieties such as Oseleta, harvested by hand at optimal ripeness. After picking, the grapes undergo the traditional appassimento process, being carefully dried in ventilated lofts for several months to intensify sugars, aromatics and structure. Once gently pressed, the must is fermented slowly and then aged for an extended period in oak barrels and subsequently in bottle, allowing the wine’s powerful structure, complex aromatics and velvety texture to fully develop before release, particularly in this rare magnum format.
Food & Serving
This is a meditative wine that shines alongside rich, deeply flavored dishes. Think slow-braised beef short ribs, osso buco, game such as venison or wild boar, or aged hard cheeses like Parmigiano-Reggiano and mature Grana Padano. It also pairs beautifully with truffle risotto or dishes featuring reduced meat sauces. Serve at 16–18°C (60–64°F) to highlight both its aromatics and structure. Decant generously—at least 2 hours for young bottles, and even longer for maximum expression in magnum—to allow the wine to open up and reveal its full spectrum of dark fruit, spice and savory complexity.
