In the cellar, the grapes are traditionally destemmed or partly whole-cluster fermented with native yeasts, then gently pressed and aged in French oak barrels—largely used or lightly toasted—so that the oak frames rather than dominates the wine, allowing the Dundee Hills character and Pinot purity to take center stage.
