Willi Schaefer’s Graacher Domprobst Riesling Auslese AP #11 2009 is a benchmark Mosel sweet wine that marries incredible depth with almost weightless finesse. Drawn from the steep slate vineyards above the village of Graach, this Auslese combines dazzling acidity, late-harvest concentration and a finely etched, floral elegance. AP #11 denotes a specific, top-tier cask selection, capturing the purest expression of the vintage and site, in a style that has made Schaefer’s long-lived Auslesen legendary among German Riesling collectors.

Tasting Notes
In the glass, the wine shows a bright, luminous golden hue that hints at both ripeness and slow evolution in bottle. The nose is strikingly complex, evoking fine Normandy cider and orchard fruit alongside honeysuckle, peony and lily, interwoven with lemon zest and a distinct crushed-slate minerality. Subtle notes of botrytis add a gentle, honeyed and musky dimension without weighing the wine down. On the palate, it feels almost ethereal: silk-textured, delicately sweet and yet lifted by vibrant, high acidity that keeps everything impeccably balanced. Flavors of baked apple, ripe pear, citrus oil and stone fruit mingle with floral tones and a saline, alkaline edge that makes the finish mouthwatering rather than cloying. There is a sense of near-weightlessness and quiet power, with a finish that seems to go on and on. This 2009 Auslese has the structure and concentration to age effortlessly for three decades or more, evolving towards deeper honey, dried apricot and petrol notes while retaining its core of freshness.

Production
Graacher Domprobst is one of the Mosel’s great steep-slope vineyards, characterized by Devonian slate soils that store heat by day and release it at night, helping Riesling ripen slowly while preserving piercing acidity. In 2009, most of the harvest here took place in the second half of October, as the Schaefer family deliberately waited for full flavor development despite the grapes already looking pristine on the vine. The fruit was hand-harvested in multiple passes, with meticulous selection of late botrytised clusters encouraged by light October rains, followed by dry, clean conditions that concentrated both sugars and naturally high acids. In the cellar, the must was gently pressed and fermented with great sensitivity, then left on fine lees at least until March, allowing the wine to gain texture and nuance. Only after tasting from cask did the Schaefers decide which lots would be bottled at Auslese level, with AP #11 representing one of the most refined, botrytis-tinged selections of the vintage.

Food & Serving
This Auslese is superb with rich, salty and aromatic dishes that play off its sweetness and acidity: try it alongside blue cheeses such as Roquefort or Stilton, foie gras terrine, or roast poultry with fruit-based glazes. It also pairs beautifully with lightly spicy Asian cuisine (Thai or Vietnamese dishes with chili, ginger and lime) and elegant fruit desserts like lemon tart, apple tarte tatin or poached pears. Serve well-chilled, ideally around 8–10°C (46–50°F), to emphasize freshness and aromatics. A short, gentle decant or time in the glass can help the wine open up its layers, especially as it gains more bottle age.

The Willi Schaefer estate is a small, family-run domaine based in Graach an der Mosel, renowned for producing some of Germany’s most graceful and ageworthy Rieslings. Working tiny holdings in Graacher Domprobst and Himmelreich, the Schaefer family has long championed low yields, meticulous handwork on their vertiginous slate slopes and a remarkably traditional, low-intervention approach in the cellar. Over the decades, their Spätlesen and Auslesen—from legendary vintages such as 1971, 1973, 1975 and 1976—have earned a reputation for uncanny longevity, often outlasting peers from the same eras. Today, Willi and Christoph Schaefer’s wines are considered reference points for classic Mosel Riesling, celebrated for their purity, balance and an almost timeless sense of place.
