First bottled as a separate wine from Schlossberg only since 2018, it offers the classic Kabinett balance of lightness, mineral drive, and subtle sweetness, with the promise of graceful evolution in bottle.

Tasting Notes
In the glass, this 2025 Kabinett is expected to show a pale, shimmering color with the delicate clarity typical of Mosel Riesling. The bouquet opens with citrus zest, light yellow fruits, herbal notes, and the site’s signature slate spice; with air, the wine develops more exotic fruit tones and white flowers, while youthful spontaneous nuances may initially appear and then fade. On the palate it should be finely etched and delicate, with bright acidity, light sweetness, and a distinctly mineral finish that gives it both immediate charm and excellent aging potential. This is a wine that is already appealing in its youth but should gain depth and complexity over time, especially as the fruit becomes more layered and the slate-driven character integrates further. The balance of delicacy and structure suggests very good cellaring potential for a Kabinett.

Production
The Schlossberg vineyards are still relatively young by Weiser-Künstler standards, at around 25 years old, yet they are already capable of producing a wine with notable character and clarity. The site’s steep Mosel terroir and slate soils contribute the classic mineral tension and spicy precision for which the estate is known, and the grapes are harvested carefully to preserve the finesse and natural freshness of the Riesling. Vinification is handled in a way that respects the vineyard expression, resulting in a pure, site-transparent Kabinett with subtle spontaneity and excellent balance.

Food & Serving
This Kabinett works especially well with lightly spiced Asian dishes, freshwater fish, shellfish, sushi, and dishes with a touch of sweetness or acidity, such as pork with fruit or salads with citrus dressings. Serve well chilled, ideally around 8–10°C, to emphasize its freshness and lift. Decanting is not necessary, though a short period in the glass can help the aromatic profile open beautifully.
