Weingut Ziereisen Jaspis Gutedel 10 hoch 4 Alte Reben 2021 is a benchmark Chasselas (Gutedel) from Baden, crafted from very old vines and treated with the seriousness usually reserved for great Burgundy. Intensely mineral, lean yet deeply concentrated, it has been hailed by critics as a reference-point wine for the grape variety worldwide. With scores up to 18.5/19 in Vinum and praise from Robert Parker’s team as “perhaps the greatest Gutedel on planet wine,” this is a cult bottling with the structure to age for decades.

Tasting Notes
In the glass, the wine is a luminous, pale straw to light lemon yellow, with a crystalline brightness that hints at its precision and tension. The nose is immediately striking: notes of crushed flint and wet stone sit at the core, wrapped in delicate aromas of white flowers, green and yellow orchard fruit, a touch of citrus zest, and a subtle, creamy undertone from long lees contact. On the palate, it is both razor-fine and immensely dense, an almost paradoxical combination of slim, taut structure and profound concentration. A fine, well-integrated phenolic grip provides texture without heaviness, while a subtle, elegant fruit sweetness (think ripe pear, apple skin and a hint of mirabelle) adds charm without ever tipping into opulence. The finish is long, saline, and distinctly mineral, with a cool, stony pressure that lingers for an astonishing amount of time. Despite its current youthful tension, the wine is already beautifully balanced and has the potential to evolve and gain complexity for at least 20 years, developing more nutty, honeyed and smoky nuances over time.

Production
Sourced from very old Gutedel (Chasselas) vines (“Alte Reben”) in Baden, this cuvée reflects the limestone- and stone-rich soils that give it such pronounced flinty minerality and salt-tinged length. The terroir is cool to moderate, allowing slow, even ripening and preserving a naturally vibrant acidity while building impressive extract. Grapes are hand-harvested at optimal ripeness to ensure pristine fruit selection and concentration. In the cellar, Ziereisen treats Gutedel with the same respect as top Burgundian Chardonnay: gentle pressing, spontaneous fermentation with indigenous yeasts, and extended élevage on the lees, often in neutral vessels (including large oak) to build texture without overt wood influence. Minimal intervention and low yields result in a wine of remarkable clarity, density and precision that speaks clearly of its origin.

Food & Serving
This is a gastronomic white that shines with refined, subtly flavored dishes. Pair it with freshwater fish (trout, char, pike-perch), shellfish, sashimi, fine veal dishes, roasted poultry, or vegetable-driven cuisine with mushrooms, root vegetables and beurre blanc or light cream sauces. Its mineral backbone and phenolic grip also work beautifully with alpine cheeses, delicate goat cheeses, or lightly aged hard cheeses. Serve at 10–12°C to highlight its precision and minerality; slightly warmer (up to 13°C) if you want to emphasize texture and depth. Young bottles benefit from 30–60 minutes in a decanter to let the flinty notes and fine Gutedel fruit fully unfurl.
