Production
The grapes for Jaspis Däublin Syrah are sourced from a select parcel in the Markgräflerland area of southern Baden, where vineyards sit on limestone-rich soils with loess and clay, benefiting from a relatively warm yet breezy climate moderated by the nearby Black Forest and Rhine plain. Yields are kept low and the fruit is harvested by hand to ensure optimal ripeness and careful selection in the vineyard. In the cellar, Ziereisen follows a low-intervention philosophy: spontaneous fermentation with indigenous yeasts, often including a proportion of whole clusters, followed by a long maceration to build structure and extract fine tannins. The wine is then aged in high-quality oak barrels (predominantly used barriques and larger formats) for an extended period on the lees, with minimal racking and gentle handling before bottling, typically unfiltered or only lightly filtered to preserve purity and texture.

This Syrah’s combination of freshness, structure, and savoury depth makes it a superb partner for hearty and flavourful dishes. Think grilled lamb chops with rosemary, slow-braised beef or venison, duck breast with dark fruit reduction, or charcuterie and aged hard cheeses like Comté or Manchego.
