Crafted in tiny quantities, it brings together old-vine concentration, finesse, and a distinctly European sense of restraint. The “Jaspis” label marks Ziereisen’s top-tier, site-focused wines, and Däublin is one of the estate’s most prized parcels, long known locally for its ability to produce deeply characterful reds.

Tasting Notes
In the glass, the Jaspis Däublin Syrah 2021 shows a deep, vibrant ruby core with a subtle violet rim, hinting at both youth and intensity. The nose is refined and complex, layering black cherry, wild blackberry, and dark plum with freshly cracked black pepper, graphite, smoked meat, and a touch of dried violets. Subtle notes of forest floor, cured herbs, and a whisper of fine oak underline its cool-climate origin. On the palate, this is elegant rather than heavy, with a taut, linear structure framed by finely grained tannins and bright, refreshing acidity. Flavours of dark berries, blackcurrant, and sour cherry mingle with savoury notes of olive tapenade, bacon fat, and cracked pepper, leading into a long, mineral-etched finish. The wine is still youthful and slightly firm in 2021, with clear potential to evolve: it should drink beautifully over the next 8–12 years, gaining complexity, softness, and greater aromatic depth with time in bottle.

Production
The grapes for Jaspis Däublin Syrah are sourced from a select parcel in the Markgräflerland area of southern Baden, where vineyards sit on limestone-rich soils with loess and clay, benefiting from a relatively warm yet breezy climate moderated by the nearby Black Forest and Rhine plain. Yields are kept low and the fruit is harvested by hand to ensure optimal ripeness and careful selection in the vineyard. In the cellar, Ziereisen follows a low-intervention philosophy: spontaneous fermentation with indigenous yeasts, often including a proportion of whole clusters, followed by a long maceration to build structure and extract fine tannins. The wine is then aged in high-quality oak barrels (predominantly used barriques and larger formats) for an extended period on the lees, with minimal racking and gentle handling before bottling, typically unfiltered or only lightly filtered to preserve purity and texture.

Food & Serving
This Syrah’s combination of freshness, structure, and savoury depth makes it a superb partner for hearty and flavourful dishes. Think grilled lamb chops with rosemary, slow-braised beef or venison, duck breast with dark fruit reduction, or charcuterie and aged hard cheeses like Comté or Manchego. It also pairs wonderfully with roasted root vegetables, mushroom dishes, and herb-laced Mediterranean cuisine. Serve at 16–18°C (60–64°F) to highlight its aromatics and balance; a gentle decant of 45–60 minutes is recommended in its youth to help the wine open up and soften the tannins.

Weingut Ziereisen is a highly regarded family-run estate based in Efringen-Kirchen in Baden’s Markgräflerland, close to the borders with France and Switzerland. Over the past decades, Hanspeter and Edeltraud Ziereisen have built a reputation as one of Germany’s most intriguing and individualistic producers, known for focusing on terroir-driven, long-lived wines, particularly from Pinot varieties and Syrah. Working largely by hand in the vineyards, they embrace low yields, late harvesting, and minimal intervention in the cellar, championing a style that often challenges conventional expectations of German wine.
