Weingut Zähringer Schaumwein Zero is a fresh, elegant alcohol-free sparkling wine from Baden, crafted by one of Germany’s most respected biodynamic producers. Tasting Notes
In the glass, it shows a light, pale appearance with lively bubbles that give it an inviting, delicate look. The nose is clean and expressive, with notes of citrus, green apple, and white flowers, while the palate is light, harmonious, and refreshing, balancing fruitiness with a gentle sweetness and a crisp, dry-feeling finish.

Production
Schaumwein Zero is produced in Baden in southern Germany, where Zähringer’s vineyards benefit from a warm climate and mineral-rich soils that support aromatic white varieties. The estate works biodynamically and with great attention to terroir, using Chardonnay, Pinot Blanc, and Chasselas grown in a region known for precision and freshness.
The wine is first made as a traditional sparkling wine, then gently dealcoholized using a low-pressure vacuum process. This careful method allows the alcohol to evaporate at a lower temperature, helping preserve aroma, texture, and the wine’s overall balance.
Food & Serving
Serve well chilled, ideally around 6–8°C, as an aperitif or alongside light dishes. It pairs nicely with seafood, salads, mild cheeses, vegetable-based starters, sushi, and delicate canapés. Decanting is not necessary.
Producer
Weingut Zähringer is a family-run estate in Heitersheim, Baden, with roots dating back to 1844. Now led by the sixth generation, Fabian Zähringer, the winery has been a pioneer in organic farming since 1987 and has been Demeter-certified biodynamic since 2010.
The estate is widely recognized for elegant, terroir-driven wines with freshness, precision, and a clear sense of place. Its Chardonnay and Spätburgunder, in particular, have earned strong acclaim for their refined, Burgundy-inspired style and the purity that comes from biodynamic viticulture in one of Germany’s warmest wine regions.
