Tasting Notes
The wine typically shows a bright, pale straw color with a youthful, crystalline sheen. On the nose, expect fresh citrus, green apple, white peach, and a distinct stony, slate-driven minerality, often with a subtle herbal edge that reflects the cool, finely tuned Rebholz style.
On the palate, it is precise and linear, with juicy Riesling fruit carried by lively acidity and a finely textured, mineral finish. The red Rotliegendes terroir adds depth and elegance rather than weight, giving the wine impressive clarity and energy. While already delicious in its youth, it should also develop beautifully over the next several years, gaining complexity and a more honeyed, petrol-tinged nuance with age.
Production
The grapes come from younger parcels in Birkweiler, lower on the slope, where the red slate soils of the Rotliegendes contribute to the wine’s distinctive finesse. The fruit is harvested by hand, then destemmed, crushed, and pressed after about 24 hours of skin contact. Fermentation and maturation take place in stainless steel, preserving purity, freshness, and the reductive character that defines Rebholz’s Rieslings.
Food & Serving
This is a superb match for seafood, shellfish, sushi, grilled white fish, asparagus, and light poultry dishes, as well as classic German fare such as pork with fresh herbs or creamy vegetable preparations. Serve well chilled, ideally around 8–10°C, and decanting is not necessary—though a short time in the glass will help the wine open beautifully.
