My name is Mathias Breinholt, and I work as a sommelier and restaurant manager at Restaurant Domestic in Aarhus.
To me, wine is first and foremost about people, places, and the stories hidden behind the bottle. I am naturally curious and am especially drawn to wines with a clear identity—wines where you can taste both the craftsmanship, the producer, and the place they come from.
In my work at Domestic, wine is a natural extension of the kitchen. I especially enjoy finding pairings where food and wine elevate each other, but also challenging the classic ideas of what should necessarily be drunk with a particular dish.
I have a great love for the classic wine regions and their history, but I am just as excited when I discover a small producer, an overlooked grape variety, or a region I do not yet know. To me, it is precisely this curiosity that makes wine meaningful—you are never quite finished learning.
