Bognæs Vingaard, Kaos (Spontangæret Solaris på egetræ), 2023

Kaos is a distinctive Danish white wine that brings together intensity, elegance, and a touch of natural sweetness. Made from late-harvest Solaris grapes with a portion affected by noble rot, it combines richness and complexity with the subtle influence of spontaneous fermentation and nine months in used oak.

Tasting Notes
In the glass, Kaos shows a deep golden hue that hints at its generous style. The nose is layered with ripe apricot, baked apple, tropical fruit, and gentle notes of vanilla and honey. The palate is full and supple, yet lifted by a refined acidity that keeps the wine balanced and focused. The texture is rounded and expressive, with enough depth to suggest it can develop further for a few years, while already offering plenty of charm now.

Production
Produced by Bognæs Vingaard in Sjælland, this wine is made from late-harvest Solaris grapes, around 20% of which were affected by botrytis. The wine was spontaneously fermented and matured for nine months in used oak barrels, adding texture and nuance without overpowering the fruit.

Food & Serving
Kaos is an excellent match for mature cheeses, poultry dishes, and foie gras, where its richness and subtle sweetness can shine. Serve it lightly chilled, around 10-12°C, and consider gentle decanting if enjoyed young to help open up its aromatic layers.
