With its clean fruit profile, bright acidity, and discreet oak influence, it offers a polished, terroir-driven style that feels both precise and inviting.

Tasting Notes
In the glass, this Chardonnay shows a bright straw-yellow color that catches the light beautifully. The nose is pure and expressive, with aromas of lemon, stone fruit, pear, apple, and a subtle hint of almond. On the palate, it is lively and succulent, with ripe fruit balanced by vibrant acidity and a distinct mineral, chalky edge from the limestone soil. Gentle barrel aging adds softness and a rounded texture without overshadowing the freshness, giving the wine a charming, almost melting feel on the tongue. It should drink well now, but also has the structure to develop additional complexity over the next few years.

Production
The Pastorei parcel was chosen for Chardonnay because of its high proportion of limestone and clay, soils that help the variety show both finesse and depth. The wine was spontaneously fermented and then matured for 10 months in large, used tonneau oak barrels, allowing the fruit and mineral character to remain at the forefront while gaining texture and subtle complexity.

Food & Serving
This is an excellent match for roast chicken, creamy pasta, grilled fish, shellfish, or dishes with mild butter or herb sauces. Serve it chilled, ideally around 10–12°C, and consider a brief aeration in the glass if you want the aromatic complexity to open up further.
