The Steinacker vineyard lies just south of Appenheim near Nieder-Hilbersheim, on sun-exposed slopes characterized by classic Rheinhessen limestone interspersed with iron-rich deposits. This combination lends both a cool, chalky precision and a fine, savory spice to the Riesling. Knewitz typically works with meticulously selected, hand-harvested grapes to ensure optimal ripeness and perfect health at picking. In the cellar, the must is gently pressed and fermented slowly, primarily in stainless steel and/or large neutral oak, at controlled temperatures to preserve aromatic purity and terroir expression. Extended time on the fine lees adds texture and polish, allowing the puristic limestone character to shine through without heaviness or overt oak influence.
