Tasting Notes
Now beautifully mature, the wine shows a golden, evolved colour in the glass. The bouquet opens with dried fruits, honey, nuts, and subtle oak spice, while the palate is rounded and textured, with gentle acidity and a long, nuanced finish. As it continues to unfold, notes of caramel, ripe apple, and a mineral backbone add further depth and complexity. The grapes for this 1996 vintage were hand-selected from low-yield parcels, then barrel-fermented and matured in oak casks to build complexity, texture, and balance without masking the grape’s natural fruit character.

This mature Chardonnay pairs wonderfully with roast poultry, creamy mushroom dishes, veal, lobster, or aged hard cheeses. Serve slightly chilled, ideally around 10–12°C, and consider a brief decant if the wine is showing reduction or needs time to fully open in the glass.
