Tasting Notes
In the glass, it is bright and polished, with aromas of apple blossom, kaffir lime, and honeysuckle lifting from the bouquet. The palate follows with white nectarine, pear, and a distinct salty mineral edge, framed by crisp acidity and a subtle creamy texture. Aging in French oak adds quiet notes of toasted nuts and spice without overpowering the fruit, giving the wine impressive balance and length. It can be enjoyed now for its energy and precision, but it also has the structure to develop beautifully over the next several years.

Production
The grapes come from Koosah Vineyard in Eola-Amity Hills, where volcanic soils and cool Pacific breezes help preserve natural acidity while building aromatic complexity. The site’s exposure and climate encourage slow, even ripening, resulting in fruit with both freshness and concentration. The wine is spontaneously fermented and matured in French oak barrels, a method that supports texture and complexity while keeping the fruit profile clean and focused. This restrained approach allows the character of the vineyard to remain front and center.

Serve this Chardonnay with roasted or grilled fish, scallops, lobster, or shellfish, as well as creamy pasta, risotto, or poultry in rich sauces. It is best served lightly chilled, around 10–12°C, and may be given a brief decant if you want to open up its aromatic layers more quickly.
