Grapes are typically hand-harvested at optimal ripeness, then carefully selected and laid out in ventilated drying rooms (fruttai) for several months in the classic appassimento process. As the grapes dehydrate, their sugars, flavors, and phenolic compounds become concentrated. After this drying period, the grapes are gently crushed and undergo a slow fermentation at controlled temperatures to preserve aromatics while managing the elevated potential alcohol. The wine is then matured—often in a combination of large Slavonian oak casks and French oak barrels—to refine the tannins, integrate flavors, and develop tertiary complexity before bottling.
