Sourced from the high-calibre Ravera vineyard in Novello, it combines firm structure with striking purity and finesse. Long considered a benchmark bottling, this Barolo showcases Vietti’s meticulous craftsmanship and the timeless character of Piedmont’s limestone hills.

Tasting Notes
In the glass, the 2021 Ravera shows a luminous, deep garnet core with the classic Nebbiolo transparency at the rim. The nose is youthful and detailed: fresh red cherries, wild strawberry and blood orange peel are layered with rose petals, dried violets, licorice, and crushed stones. Subtle hints of cedar, tobacco leaf, sweet spices and a faint balsamic lift emerge with air, signaling both complexity and ageworthiness. On the palate, this is taut, energetic and finely chiselled. Precise red fruit—sour cherry, raspberry and pomegranate—is wrapped in a vibrant spine of acidity and firm, beautifully grained tannins. Notes of orange zest, anise, tea leaf and savory herbs unfold towards a long, mineral-driven finish with a lingering echo of floral and saline tones. Still compact in its youth, the 2021 has significant aging potential; it will reward patience over the next 15–25 years, gaining aromatic depth, silkier texture and greater tertiary complexity.

Production
Ravera is one of Novello’s highest-regarded crus, defined by calcareous marl, clay-limestone soils and a relatively cool, breezy exposure that naturally favors Nebbiolo’s aromatic lift and firm backbone. Vietti harvests by hand, parcel by parcel, to ensure optimal ripeness and selection of only the healthiest bunches. After gentle crushing and destemming, fermentation occurs in stainless steel or concrete with temperature control and regular pump-overs or délestage to extract color and fine tannins. The wine is then matured for an extended period—traditionally around 30–32 months—in large Slavonian oak casks (with a measured use of smaller barrels where appropriate), allowing the Barolo to evolve slowly, preserving its purity of fruit, site transparency and structural integrity before bottling.

Food & Serving
Vietti Barolo Ravera 2021 is a natural partner for richly flavored, savory dishes: braised beef or veal shank, slow-cooked lamb, game birds, truffle risotto, tajarin with ragù, and aged hard cheeses such as Parmigiano Reggiano or mature Pecorino. It also shines with mushroom-based dishes and roasted root vegetables that echo its earthy, floral character. Serve at 16–18°C (60–64°F) in large Burgundy or Nebbiolo stems to allow the aromatics to fully develop. Decanting for 2–3 hours in its youth is recommended to soften the tannins and reveal the wine’s layered complexity; older bottles may need a gentler, shorter decant mainly to separate sediment.
