Tasting Notes
In the glass, this Blanc de Blancs shows a pale, crystalline straw color with green reflections and a delicate, persistent mousse. On the palate, it is precise and tensile, driven by vibrant acidity and a fine, creamy bead. Production
This Champagne is sourced from Premier Cru vineyards in the Côte des Blancs, primarily around the village of Vertus, where chalk and limestone soils give Chardonnay its signature tension and minerality. All grapes are harvested by hand to ensure pristine fruit is brought to the press. The must is vinified parcel by parcel, often in a combination of stainless steel and neutral vessels to preserve freshness and detail, and then blended across several years’ reserve wines to build depth and consistency of style. Extended aging on the lees in bottle enhances texture and complexity, while the Extra Brut dosage (very low sugar) is chosen to showcase the terroir’s precision and the house’s hallmark elegance.

This Blanc de Blancs Extra Brut is a natural match for refined, delicate dishes where freshness and texture matter. Think oysters, scallop ceviche, sushi and sashimi, or simple grilled white fish with lemon and herbs. It also pairs beautifully with goat cheese, lightly aged hard cheeses, tempura, and fine charcuterie.
