Named “Carrubo” after the carob trees typical of the region, it is a modern interpretation of a classic Manduria red, built on both ripeness and balance. Tasting Notes
In the glass, the 2020 Carrubo shows an intense, almost opaque ruby red color with purple highlights at the rim, hinting at both youth and concentration. Swirl the glass and you’ll notice thick, slow-moving legs, reflecting the wine’s generous body and extract. The nose is seductive and expressive, with ripe black plum, blackberry jam, and dark cherry at the core, wrapped in notes of sweet spice and Mediterranean scrub. Hints of licorice, cocoa, vanilla, and a touch of black pepper emerge with air, alongside subtle notes of dried fig and tobacco that are typical of top Primitivo di Manduria. On the palate, Carrubo 2020 is full-bodied, supple, and enveloping, with rich, sweet-edged dark fruit flavors balanced by fresh acidity. Flavors of blackberries, macerated cherries, and plum compote mingle with baking spices, chocolate, and a savory nuance of dried herbs and leather on the long finish. The tannins are fine-grained and velvety, giving structure without harshness, while the alcohol is warm but well integrated. This vintage is already approachable and generous in its youth, but it has the stuffing to age gracefully. Over the next 5–8 years, expect the primary fruit to evolve toward more dried and savory notes, with the spice and tertiary nuances becoming more pronounced and the texture even more harmonious.

Production
Carrubo is sourced from selected Primitivo vineyards in Manduria, in the province of Taranto, where the vines benefit from a classic Apulian terroir: limestone- and clay-rich soils, abundant sunlight, and the moderating influence of sea breezes from the nearby Ionian coast. These conditions allow Primitivo to reach full phenolic ripeness while maintaining a core of freshness. The grapes are typically harvested by hand, often in the cooler hours of the day, to preserve aromatics and ensure careful selection of only the best bunches. In the cellar, the fruit undergoes a controlled-temperature fermentation to extract color, aroma, and soft tannins without bitterness or over-extraction. Maceration on the skins is extended enough to build depth, followed by maturation—partly in oak barrels—to add complexity, polish the tannins, and weave in subtle notes of spice and toast, all while keeping the grape’s exuberant fruit at center stage.

Food & Serving
This Primitivo di Manduria is a natural match for robust, flavorful dishes. Think grilled or slow-braised meats such as lamb shanks, short ribs, or beef stew; richly sauced pasta with ragù; and hearty oven-baked dishes like lasagna or eggplant parmigiana. It also pairs beautifully with aged cheeses (Parmigiano Reggiano, Pecorino, mature Caciocavallo) and charcuterie, including spicy salumi that echo the wine’s warm spice profile. Serve Carrubo at 16–18°C (60–64°F) to best showcase its aromatics and texture. Decanting for 30–60 minutes before serving is recommended, especially in its youth, to allow the wine to open up and reveal its full spectrum of fruit, spice, and savory complexity.
