Tasting Notes
In the glass, the 2024 Merus Sauvignon Blanc shows a bright, pale straw-yellow color with greenish reflections that hint at its youthful freshness. The nose is lively and aromatic, offering notes of gooseberry, lime zest, green apple and fresh-cut grass, layered with hints of elderflower, white currant and a subtle mineral edge.
On the palate, this wine is crisp, dry and medium-bodied, with zesty acidity that keeps everything taut and refreshing. Citrus and green fruit flavors dominate at first—think lemon, grapefruit and crunchy pear—before giving way to nuances of herb garden, nettle and wet stone. The finish is clean and persistent, with a mouthwatering salinity that invites another sip. Best enjoyed in its first 2–4 years to capture its vibrant aromatics and tension, though the structure will allow it to hold comfortably for a few more years in good storage.
Production
Tiefenbrunner sources the Sauvignon Blanc for the Merus line from select vineyards in Trentino-Alto Adige, where steep, well-exposed slopes, cool Alpine nights and warm, sunny days help grapes ripen slowly while preserving high natural acidity. Soils are typically a mix of limestone, clay and gravel, contributing both freshness and a distinct mineral character. Grapes are harvested predominantly by hand at optimal ripeness to protect the delicate aromatics, then gently pressed. Fermentation takes place in temperature-controlled stainless-steel tanks to lock in varietal purity and crispness, with the wine resting on fine lees for a short period to add a touch of texture and complexity without masking its clean, linear profile.
Food & Serving
This Sauvignon Blanc is a natural partner for light, fresh dishes: think goat cheese salads, asparagus with hollandaise, grilled vegetables, ceviche, sushi, shellfish, and simply prepared fish such as grilled sea bass or trout. It also pairs beautifully with herb-driven cuisine—dishes featuring basil, mint, tarragon or coriander work especially well. Serve well-chilled at around 8–10°C to highlight its aromatic lift and racy acidity. Decanting is not necessary; simply open the bottle shortly before serving to enjoy its youthful, zesty character at its best.
