It showcases how so‑called PIWI varieties can deliver not just sustainability in the vineyard, but real character and quality in the glass. This is a wine for curious drinkers who appreciate precise, mineral-driven whites with a modern, eco-conscious edge.

Tasting Notes
In the glass, the 2021 Souvignier Gris Bio presents a luminous straw-yellow color with subtle copper glints that hint at the naturally thick-skinned grape. The nose is inviting and quietly complex: ripe pear, white peach and crisp apple weave together with notes of citrus zest, fresh herbs and a gentle floral lift, supported by a fine mineral edge. On the palate, it is dry, medium-bodied and finely textured, with a vibrant yet well-integrated acidity that keeps everything focused and refreshing. Flavors of stone fruit, Meyer lemon and crunchy orchard fruit are layered with hints of fennel, chamomile and a stony salinity that lingers on the finish. The structure and acidity suggest this wine will drink beautifully now but can evolve over the next 3–5 years, gaining more honeyed and nutty nuances while retaining its backbone.

Production
Hof Gandberg lies above Eppan in Trentino–Südtirol, where cool Alpine air meets the warmth of the Adige Valley, creating an ideal microclimate for precise, aromatic whites. The vineyards are farmed organically and planted with PIWI varieties like Souvignier Gris, whose natural resistance to fungal disease allows for dramatically reduced treatments in the vines. Grapes are harvested by hand at optimal ripeness to preserve freshness and varietal character, then gently pressed. Fermentation typically takes place in temperature-controlled stainless steel with native or carefully selected yeasts, followed by aging on fine lees to enhance texture and complexity, while maintaining the wine’s clarity and mineral precision.

Food & Serving
This Souvignier Gris Bio 2021 is a versatile food partner, shining alongside freshwater fish, shellfish, grilled vegetables, delicate poultry dishes and alpine specialties such as mild goat’s cheese or soft cow’s milk cheeses. It pairs particularly well with trout with herbs, risotto with spring vegetables, or light pasta with seafood and lemon. Serve chilled at around 8–10°C to highlight its freshness and aromatic detail. A brief splash in a carafe or a few minutes in the glass is enough to let the wine open up; extended decanting is not necessary, but serving it in medium-sized white wine glasses will help reveal its subtle nuances.
