Crafted from the innovative PIWI grape Solaris, it shows just how refined and expressive disease-resistant varieties can be in the hands of an experienced grower. This bottling is a compelling alternative to classics like Riesling or Chardonnay, offering Alpine freshness and impressive depth. The unique selling point of this wine lies in its combination of certified organic farming and the use of Solaris, a fungus-resistant (PIWI) crossing that allows for dramatically reduced vineyard treatments while maintaining high quality. Tasting Notes
In the glass, Solaris Bio 2019 typically presents a bright straw-yellow hue with greenish reflections, underlining its youthful energy and Alpine origin. The wine is crystal clear and lively, with slow-forming legs hinting at both extract and concentration. The nose is expressive and inviting, often combining notes of ripe orchard fruits and citrus with a distinct cool-climate lift. Expect aromas of yellow apple, pear, and juicy peach alongside lemon zest, lime blossom, and white flowers. Subtle herbal tones—like fresh meadow herbs, lemon balm and a hint of mint—intertwine with mineral notes reminiscent of wet stone and crushed chalk, a direct echo of its limestone and dolomite soils. On the palate, Solaris Bio 2019 is typically dry, medium-bodied and vibrant, with a pronounced yet well-integrated acidity that gives the wine tension and length. The fruit profile mirrors the nose—crisp apple, pear and tangy citrus—joined by hints of gooseberry and exotic nuances such as pineapple or passion fruit in warmer vintages. A fine, stony minerality runs through the mid-palate, lending structure and a slightly saline edge. The texture is polished and slightly creamy from careful handling on the lees, yet never heavy; the finish is long, clean and refreshing, with lingering citrus peel and herbal notes. Aging potential is solid for a PIWI white of this style. While wonderfully approachable now for its freshness and primary fruit, the wine can develop further complexity over 3–6 years from vintage, gaining more honeyed, nutty and spicy nuances while retaining its backbone of acidity and mineral character.

Production
The Solaris vines for this cuvée grow on steep, elevated sites around Eppan Berg, Putschwan and Kalterer Höhe in Trentino–Südtirol, between roughly 500 and 700 meters above sea level. These vineyards are characterized by stony, well-drained soils rich in limestone and white dolomite, which, together with strong diurnal temperature swings, foster slow, even ripening and a remarkable aromatic purity. As a certified organic estate and a pioneer in PIWI varieties, Hof Gandberg relies on minimal intervention in the vineyard, with no synthetic pesticides—made possible in part by the natural fungus resistance of Solaris—and careful canopy management to maintain healthy, balanced fruit. Harvest is typically done by hand, allowing strict selection of perfectly ripe clusters. In the cellar, Thomas Niedermayr favors a gentle, low-intervention vinification: the grapes are delicately pressed, the must is clarified without aggressive treatments, and fermentation takes place in temperature-controlled stainless steel (and, in some vintages, partially in neutral large oak) using natural or selected neutral yeasts. The wine often rests for a period on fine lees to build texture and complexity before being bottled with minimal fining and restrained use of sulfur, preserving both terroir expression and freshness.

Food & Serving
Solaris Bio 2019 is a versatile food wine that pairs beautifully with a range of fresh, flavourful dishes. It is an excellent match for delicately prepared fish and seafood—think grilled trout, steamed white fish with herbs, or seared scallops—as well as vegetable-led cuisine such as asparagus risotto, herb gnocchi, or grilled seasonal vegetables. Its aromatic lift and clean acidity also complement light poultry dishes, sushi and sashimi, and Alpine specialties like freshwater fish with potatoes or mild mountain cheeses and soft goat’s cheese. For optimal enjoyment, serve this wine at around 8–10 °C (46–50 °F); slightly cooler for an aperitif, and closer to 10 °C when pairing with food to let the aromatics open up. Decanting is not strictly necessary, but a brief time in the glass helps the wine unfold its floral, herbal and mineral complexity. Use medium-sized white wine glasses to highlight both its precision and textural depth.
