Tenute Rubino’s Metodo Classico Sumare Extra Brut 2021 is a distinctive sparkling wine from Puglia, made entirely from the local Susumaniello grape. It combines regional identity with the finesse of traditional bottle fermentation, offering a fresh, precise style that stands out among southern Italian sparkling wines. As one of the more characterful expressions of Susumaniello, it reflects both the revival of an almost forgotten variety and the growing ambition of Apulian winemaking.

Tasting Notes
Pale straw in the glass with a lively, persistent mousse and fine bubbles. The nose is fresh and inviting, with notes of citrus peel, green apple, white flowers, and subtle bread dough nuances from time on the lees. On the palate, it is dry, crisp, and well-defined, balancing bright acidity with a delicate creamy texture. Expect flavours of lemon zest, orchard fruit, and a savoury mineral edge, finishing clean and refreshing. Thanks to its structure and acidity, it should hold well over the next few years, developing added complexity with short-term cellaring.

Production
Produced in Apulia from Susumaniello grown in warm Mediterranean conditions, where calcareous soils and coastal influences help preserve freshness in the grapes. The fruit is typically harvested by hand to ensure quality and picked at optimal ripeness for sparkling wine production. Vinified using the traditional Metodo Classico, the wine undergoes secondary fermentation in bottle and extended lees aging to build texture, complexity, and fine bubbles.

Food & Serving
This Extra Brut is an excellent match for seafood, oysters, shellfish, sushi, and light Mediterranean dishes, as well as fried starters and soft cheeses. Serve well chilled, ideally around 6–8°C. Decanting is not necessary; instead, open shortly before serving to preserve its freshness and effervescence.
