Production
The grapes come from San Leonardo’s vineyards in Avio, in Vallagarina at the foot of the Dolomites. The area’s alpine climate, tempered by Mediterranean influences, helps shape the wine’s aromatic character and finesse. Fermentation takes place spontaneously with indigenous yeasts in small cement vats over approximately 15 days, with pump-overs and délestage to extract colour and soften the tannins. The wine then matures for 12 months in new French oak barrels. The producer describes its approach as organic and sustainable, and the wine as vegan.
