Stone White Sauvignon Blanc from Walter Polz is a distinctive, terroir-driven white wine from Südsteiermark, shaped by the stony soils of Hochgrassnitzberg on the Slovenian side. This is a Sauvignon Blanc with real individuality: precise, mineral, and made with a natural, hands-on approach that sets it apart in the region.

Tasting Notes
In the glass, it shows a bright, clean profile with an emphasis on freshness and clarity rather than overt fruitiness. The nose opens with citrus, yellow orchard fruit, zesty notes, and a subtle layer of herbal spice. On the palate, it is tense and linear, with saline minerality, white pepper, and fresh herbs leading into a long, precise finish. The amphora fermentation and extended lees aging bring extra texture and depth without losing the wine’s focus. It should drink beautifully now for its energy and purity, but it also has the structure to develop positively over the next few years.

Production
The wine comes from Hochgrassnitzberg, a top site with shell limestone soils that contribute to its salty minerality, tension, and refined structure. Grapes are handled gently, then spontaneously fermented in amphora, where the wine spends a full year on the lees before further aging in stainless steel on fine lees. This combination creates depth, texture, and a very clear expression of place.

Food & Serving
Ideal with grilled fish, scallops, and refined Asian dishes, as well as vegetables such as fennel or artichoke. Serve chilled at around 8–10°C to best show its freshness and mineral edge. Decanting is not necessary, but a short aeration can help open the wine if served young.
