The soils are typically a mix of loess, primary rock and gravel, which contribute both minerality and finesse. For Beerenauslese, only individually selected, overripe berries—often touched by Botrytis cinerea (noble rot)—are harvested by hand in multiple passes through the vineyard to ensure optimal selection. In the cellar, the must is gently pressed and slowly fermented at controlled temperatures to preserve aromatic purity, with fermentation stopped to retain natural grape sugar. The wine is then matured in stainless steel or neutral vessels to highlight fruit, terroir and freshness rather than oak influence, before being blended as a meticulous non-vintage cuvée for consistent house style.
