Tasting Notes
In the glass, the Rosé Réserve 2015 shows a very delicate, onion-skin to pale salmon color with a fine, persistent mousse and pinpoint bubbles. The nose is subtle yet complex: wild strawberry and redcurrant intertwine with white peach, crisp pear, and hints of brioche, roasted hazelnut, and freshly baked pastry from the extended lees aging. Underneath, there’s a discreet chalky-mineral note and a touch of dried rose petal that adds lift and refinement. On the palate, this is taut, precise, and beautifully dry, with a Brut profile that leans toward crystalline freshness rather than opulence. Red berry notes echo the nose—think alpine strawberry and raspberry—layered with citrus zest, green apple, and a light creaminess reminiscent of lemon curd and almond croissant. The 90+ months on the lees provide depth, fine autolytic character, and an almost silky texture, while vibrant acidity and a mineral backbone keep everything focused and lively. The finish is long, saline, and elegantly savory. This 2015 has the structure to continue developing complexity over the next 5–8 years, gaining more nutty, toasty and tertiary nuances while retaining its spine of freshness.

Production
The fruit for Sekthaus Raumland Rosé Réserve Brut 2015 is sourced from carefully selected vineyards in Rheinhessen, where limestone and loess soils lend a distinct minerality and tension to the base wines. The cuvée is composed of approximately 99% Pinot Blanc (Weißburgunder) and 1% separately vinified Cabernet Sauvignon, the latter used in the traditional Champagne method of adding a small red component to achieve the delicate rosé color and red-fruited aromatics. Grapes are hand-harvested at optimal ripeness for sparkling wine—meaning lower potential alcohol and higher natural acidity—then gently whole-bunch pressed to obtain only the purest juice. After a cool primary fermentation in stainless steel (and in part, small neutral barrels, depending on the base wine), the final blend undergoes a second fermentation in bottle following the traditional method. The wine then rests sur lie for over 90 months, developing its fine bead, creamy texture, and complex brioche and nut notes, before being disgorged with a carefully judged Brut dosage that emphasizes precision and elegance.

Food & Serving
This refined rosé Sekt is a versatile partner at the table, working beautifully as both an aperitif and a gastronomic sparkling. It pairs particularly well with delicate starters such as salmon tartare, ceviche, sashimi, and oysters, as well as dishes featuring freshwater fish, crab, or lobster. Poultry—especially roast chicken with herbs—or veal in light cream sauces also benefit from its freshness and subtle autolytic richness. For vegetarian options, try it alongside beet carpaccio, goat cheese salads, or mushroom tart. Serve well-chilled at around 8–10°C; if the wine is very cold, give it a few minutes in the glass to open up. Decanting is not necessary, but pouring into large, tulip-shaped sparkling wine glasses rather than narrow flutes will best showcase its aromatic complexity and fine mousse.
