Schola Sarmenti Cubardi IGT 2017 Magnum is a powerful, sun-drenched Primitivo from the very heel of Italy’s boot, Apulia. Bottled in magnum, it’s designed for the table – generous, expressive and ideal for sharing. This is a modern interpretation of southern Italian heritage: old-vine fruit, careful craftsmanship and a style that’s both plush and precise.

Tasting Notes
In the glass, Cubardi 2017 shows a deep, almost opaque ruby core with garnet highlights on the rim, testifying to both concentration and a few years of bottle maturity. The nose is intense and inviting, layered with ripe black plum, blackberry compote and dark cherry, supported by notes of sweet spice, vanilla, licorice, cocoa and a touch of dried Mediterranean herbs. On the palate, this Primitivo is full-bodied and velvety, with a rich, mouth-filling texture and soft, ripe tannins. Flavours of dark berries, black cherries and figs unfold alongside hints of mocha, tobacco leaf and warm baking spices, balanced by a gentle acidity that keeps the wine from feeling heavy. The magnum format encourages a slower evolution; while already drinking beautifully, this 2017 has the structure to develop further complexity over the next 5–8 years, gaining more savoury and tertiary notes with time.

Production
Cubardi is crafted from Primitivo grown in the sun-baked Salento area of Apulia, where poor, rocky soils and constant sea breezes from the Adriatic and Ionian seas help concentrate flavour while preserving freshness. Schola Sarmenti works closely with local growers and old vineyards, often using low-yielding, bush-trained vines that deliver naturally small, intensely flavoured berries. Grapes are typically harvested by hand at optimal ripeness to protect the fruit and allow for careful selection in the vineyard. In the cellar, a gentle vinification with temperature-controlled fermentation extracts colour and flavour without harsh tannins, followed by maturation in oak to add complexity, polish the structure and frame the natural richness of Primitivo before bottling in magnum.

Food & Serving
This is a natural partner for hearty, flavourful dishes: think slow-braised lamb shanks, rich beef ragù with pasta, grilled or barbecued meats, ossobuco, or aged hard cheeses such as Parmigiano Reggiano and pecorino. It also works beautifully with rustic Mediterranean fare like sausage with roasted peppers, aubergine parmigiana or mushroom-based dishes. Serve at 16–18°C; in magnum format, the wine can benefit from 1–2 hours in a decanter to allow the aromatics to fully unfurl and the texture to become even more supple.
