Tasting Notes
In the glass, this Muscat Blanc shows a bright golden yellow colour with subtle, glinting reflections and slow, delicate tears. The nose opens very fresh and immediate, with a textbook Muscat expression: ripe, crunchy grape aromas, white blossom and juicy stone fruit. With a little air, deeper notes emerge of overripe grape, stewed fruits and a gentle hint of honey, adding a more opulent dimension.
On the palate, the wine is round, generous and distinctly fruity, echoing fresh grape, apricot and peach, wrapped in a soft, caressing sweetness. The sweetness is well controlled rather than heavy, kept in check by a streak of vibrant freshness that runs from the attack through to the finish. The finish is clean, lifted and mouth-watering, making this a refreshing, easy-drinking sweet-leaning white. Best enjoyed in its youth for maximum aromatic intensity, it will comfortably hold for a few years, developing more honeyed and marmalade nuances while retaining its charm.
Production
Château Saint Hilaire lies in the sun-drenched hills near Aix-en-Provence, benefiting from a classic Mediterranean climate: hot, dry summers, cooling mistral winds and a mosaic of limestone and clay soils that help preserve freshness in the grapes. The Muscat is typically harvested at optimal ripeness to capture both intense aromatics and natural sugar, with careful sorting to ensure healthy, flavour-packed fruit. Vinification focuses on preserving the varietal’s vivid character: gentle pressing, cool-temperature fermentation in stainless steel to lock in aromatics, and a controlled level of residual sugar to achieve that signature balance between sweetness and refreshing acidity, with minimal oak influence to keep the profile pure and fruit-driven.
Food & Serving
This Muscat Blanc is a natural choice as an aperitif, served well-chilled at around 8–10°C to highlight its freshness and aromatics. Its controlled sweetness makes it a superb partner for fruit-based desserts such as seasonal fruit tarts, peach melba, citrus cakes or a simple bowl of fresh berries, and it pairs surprisingly well with a rich, molten chocolate fondant where the wine’s brightness cuts through the intensity of the chocolate. It also works nicely with blue cheeses or soft goat cheeses for those who enjoy sweet–savory contrasts. Decanting is not necessary; simply open and pour, allowing the wine a few minutes in the glass to fully unfurl its Muscat perfume.
Producer
Château Saint Hilaire is the culmination of several generations of the Lapierre family’s work on the lands of Coudoux, where they have lived and farmed since the late 18th century. In 1935, Jean Lapierre left a career in the French Navy to devote himself to the estate, then primarily planted with olive trees. His son Max transformed the family property into a true wine domaine in 1952, passing his knowledge and passion down to his son Yves. In 1973, Yves founded Domaine Saint Hilaire, driven by a desire to craft wines whose richness and identity are rooted in the originality of the local terroir. The modern chapter began in 2011, when Yves and his sons Nicolas and Bruno built a dedicated winery in the middle of the vineyards, officially named Château Saint Hilaire, completed in 2016. Today, the estate stands as a respected producer in the greater Aix-en-Provence area, known for combining family tradition with a precise, quality-driven approach to Mediterranean winemaking.
