Saint-Georges Thongue D'Ibry Rosé 2024 is a bright, expressive Languedoc rosé that captures the sun-drenched charm of southern France in a fresh, modern style. Crafted from Grenache and Syrah, it balances vibrant fruit with a satisfying, rounded texture. Coming from the heart of the IGP Côtes de Thongue, this cuvée reflects a long family tradition of matching Mediterranean terroir with noble grape varieties to create characterful, approachable wines.
Tasting Notes
In the glass, this rosé shows a delicate, light pink colour with luminous reflections, hinting at its freshness and finesse. The nose opens with small red berries—think wild strawberries, redcurrants and raspberries—layered with gentle floral notes, such as rose petals and a touch of spring blossom.
On the palate, the wine is surprisingly ample for a rosé, with a fleshy, juicy core of red berry fruit that gives both volume and charm. The fresh fruit character enhances the purity of flavour, delivering clean, precise notes of red berries supported by a subtle spice from the Syrah. The finish is well-balanced, dry and refreshing, with enough structure to make it more than just an aperitif wine. Production
Domaine Saint-Georges d'Ibry works 40 hectares in the heart of the IGP Côtes de Thongue, a mosaic of soils shaped by an ancient maritime presence and a distinctly Mediterranean climate. The vineyards benefit from abundant sunshine and varied terroirs—ranging from fossil-rich, limestone-based soils to deeper, more fertile parcels—allowing Grenache and Syrah to ripen fully while retaining freshness. Grapes for the rosé are harvested at optimal maturity to capture bright fruit without excessive alcohol, then gently pressed to obtain the delicate, pale colour. Vinification is carried out in temperature-controlled tanks to preserve aromatics, with a focus on clean, precise fruit expression and a supple texture, in line with the estate’s philosophy of combining tradition with modern, environmentally respectful practices.
Food & Serving
This is an ideal rosé for Mediterranean-inspired cuisine: pair it with grilled prawns, fish skewers, Niçoise salad, charcuterie, or tapas-style small plates. It also works beautifully with summer salads featuring goat cheese, fresh herbs and ripe tomatoes, as well as lighter poultry dishes and sushi. Serve well-chilled at around 8–10°C to highlight its freshness and aromatic clarity. Decanting is not necessary; simply open and pour, giving the wine a few minutes in the glass to reveal its full floral and red-berry spectrum.
