Tasting Notes
In the glass, Ruinart Millésimé 2015 shows a luminous pale gold color with fine, persistent bubbles forming an elegant, delicate mousse. The clarity and sparkle immediately suggest a wine of precision and vitality. On the nose, expect layered aromas of ripe citrus (lemon zest, blood orange), stone fruits like white peach and apricot, and touches of crisp pear, underpinned by notes of toasted brioche, hazelnut, and subtle pastry cream from extended lees aging. Hints of white flowers, chalk, and a gentle spice note add further complexity. The palate is taut yet generous, with a vibrant, mouthwatering acidity framing flavors of citrus, green apple, and juicy Mirabelle plum, evolving toward more complex tones of roasted nuts, fresh brioche, and a light saline, chalky edge typical of fine Champagne terroirs. The texture is silky with a fine, persistent bead that carries through to a long, focused finish. Production
Ruinart Millésimé 2015 is sourced from some of Champagne’s finest vineyards, with a focus on cool, chalk-rich slopes that impart tension, minerality, and aromatic precision to the fruit. The combination of Chardonnay and Pinot Noir, drawn primarily from carefully selected crus, reflects both the finesse of Côte des Blancs chalk and the structure of Montagne de Reims and surrounding areas. Grapes are harvested by hand to ensure only the healthiest bunches make it into the press, preserving delicacy and purity. After gentle pressing and a cool, controlled fermentation in stainless steel, the still wines are blended and bottled for second fermentation following the traditional méthode champenoise. The wine then rests for several years on its lees in Ruinart’s historic chalk cellars, developing its fine mousse, creamy texture, and complex autolytic notes before disgorgement and a measured dosage to maintain balance and elegance.

Food & Serving
Ruinart Millésimé 2015 is an excellent partner for refined, delicately flavored dishes that highlight its tension and depth. Think oysters and other fine shellfish, scallop carpaccio, lobster with citrus butter, or sushi and sashimi. It also pairs beautifully with lightly roasted poultry, veal tartare, or dishes featuring mushrooms and truffle, as well as aged hard cheeses like Comté or Parmesan. Serve well-chilled, ideally at 8–10°C, in a white wine glass to allow the aromas to unfold rather than a very narrow flute. While decanting is not essential, carefully pouring the wine into a larger-bowled glass and giving it a few minutes in the glass will help release its full aromatic complexity, especially as the wine continues to gain nuance with age.
