As a Gran Selezione, it represents the pinnacle of the appellation, sourced exclusively from estate-grown fruit and produced in limited quantities.
Tasting Notes
In the glass, Ceniprimo 2021 shows a deep, vibrant ruby hue with garnet highlights at the rim, signaling both youth and intensity. The nose is layered and expressive, offering dark cherries and macerated red berries alongside notes of violet, blood orange, and dried herbs. Subtle undertones of tobacco leaf, sweet spice, cedar, and a touch of cocoa emerge with air, reflecting its careful élevage.
On the palate, this is a structured yet refined expression of Sangiovese: juicy black cherry and ripe red plum are framed by firm, silky tannins and a lively, savory acidity. Production
Ceniprimo is sourced from a single vineyard in Gaiole in Chianti, set on ancient river terrace soils rich in clay, silt, and river stones that favor powerful, deeply fruited Sangiovese with refined tannin. The site’s warm exposure and good drainage allow for optimal ripening while preserving aromatics. Grapes are hand-harvested at peak maturity, then carefully sorted before fermentation. Vinification is typically carried out in temperature-controlled steel or concrete, with gentle extraction to capture purity and finesse rather than heaviness. The wine is then aged, predominantly in large oak casks and/or tonneaux, for an extended period to integrate tannins and enhance complexity, followed by additional bottle aging prior to release as a Gran Selezione.
Food & Serving
This Chianti Classico Gran Selezione is a natural match for richly flavored Tuscan-inspired dishes: think bistecca alla fiorentina, slow-braised lamb shanks, wild boar ragù over pappardelle, or roasted game birds with herbs. It also works beautifully with aged pecorino, Parmigiano Reggiano, and truffle-accented dishes. Serve at 16–18°C (60–65°F) in large Burgundy or Bordeaux-style glasses. Decanting for 1–2 hours is recommended in its youth to open up the aromatics and soften the structure; with further bottle age, a shorter decant will suffice, primarily to separate any sediment.
