Tasting Notes
In the glass, Prunotto Barolo 2021 shows a luminous garnet core with brick-red reflections at the rim, typical of Nebbiolo even in its youth. The nose is finely etched and complex, with notes of sour cherry, wild strawberry and dried rose petals layered over hints of violet, anise, sweet tobacco, orange peel and subtle spice from barrel aging. With air, nuances of forest floor, licorice and a gentle mineral edge begin to emerge.
On the palate, this Barolo is medium to full-bodied and firmly structured, with the taut, chalky tannins that are the hallmark of great Nebbiolo. Flavors of red cherry, raspberry and pomegranate are wrapped in savory tones of leather, tea leaf and dried herbs, carried by fresh, vibrant acidity that keeps the wine lifted and long. The finish is persistent and refined, suggesting excellent aging potential. While approachable with a good decant, this 2021 will reward patience and is likely to evolve beautifully over 10–15 years or more, developing further complexity and tertiary notes.
Production
Prunotto Barolo 2021 is crafted from 100% Nebbiolo grown in select parcels across the Barolo appellation, where calcareous marl and clay-limestone soils, combined with rolling hills and excellent exposure, create ideal conditions for this demanding grape. The continental climate, with warm days and cool nights, promotes slow, even ripening and aromatic intensity. Grapes are hand-harvested to ensure careful selection in the vineyard, then gently destemmed and crushed. Fermentation takes place in temperature-controlled tanks, with a traditional maceration on the skins to extract color, tannin and aroma. The wine is then aged in a combination of large oak casks and/or carefully selected barrels, allowing Barolo’s characteristic structure to soften gradually while preserving the purity of fruit and the distinct expression of its Piedmontese terroir.
Food & Serving
This Barolo is a natural partner for rich, savory dishes such as braised beef (brasato al Barolo), osso buco, lamb shanks, and game like venison or wild boar. It also shines with Piedmontese classics such as tajarin with ragù, mushroom risotto, truffle dishes, and aged hard cheeses like Parmigiano Reggiano or mature Piedmontese cheeses. Serve at 16–18°C (60–65°F) in large Burgundy or Nebbiolo glasses to allow the aromatics to fully open. For current drinking, decant 1–2 hours before serving to soften the tannins and reveal the wine’s floral and spicy nuances.
