Its unique selling point lies in the focus on Pinot Meunier (locally called *molinar*), a grape that is rarely seen as the star of the show in Italian sparkling wines. The visual impression is one of purity and freshness, hinting at the wine’s brisk mountain origins. On the nose, expect lifted aromas of citrus zest, green apple and pear, layered with white flowers, subtle brioche or pastry notes, and a gentle nuttiness from time on the lees. Hints of alpine herbs and mineral tones add complexity and a sense of place. The palate is dry and taut in true Extra Brut style, with a lively, mouthwatering acidity that frames flavors of crisp orchard fruits, lemon peel, and a touch of stone fruit. The texture is creamy yet finely etched, thanks to well-integrated bubbles and careful aging on the lees, leading to a long, refreshing, mineral-driven finish. Enjoyable on release for its vibrancy, it also has a few years of aging potential in bottle, during which the fruit will gain more depth and the autolytic, bready notes will become more pronounced and complex.

Production
Pojer e Sandri’s vineyards in Trentino Alto Adige sit on steep, well-exposed slopes influenced by the Dolomites, with cool nights and sunny days helping to preserve acidity and aromatic precision. The soils are typically a mix of limestone, porphyry and other alpine components, contributing to the wine’s tension and mineral backbone. Grapes—predominantly Pinot Meunier, locally known as *molinar*—are harvested by hand at optimal ripeness to ensure a balance between fruit concentration and fresh acidity, crucial for high-quality sparkling wine. In the cellar, gentle pressing of whole clusters is followed by a first fermentation in temperature-controlled conditions to retain delicate aromatics. The base wine is then bottled for a traditional method second fermentation, where it gains its natural sparkle and spends extended time resting on the lees to build texture, complexity and finesse before riddling and disgorgement, with a very low dosage to maintain its Extra Brut style.

Try it with fresh oysters, shrimp cocktail, crudo, sushi and sashimi, or delicate fish preparations such as grilled sea bass or trout. It also complements soft cheeses, tempura vegetables, lightly cured meats, and simple risottos, particularly those with seafood or spring vegetables. Serve well-chilled at around 6–8°C (43–46°F) to highlight its tension and aromatics. A brief, gentle opening in the glass is usually sufficient, but if serving from magnum or very young, pouring into larger white-wine glasses can help the bouquet open up without the need for formal decanting.
