Tasting Notes
In the glass, Royale Réserve Brut typically shows a bright, pale golden color with a lively, persistent mousse and fine, elegant bubbles. On the nose, expect expressive aromas of ripe orchard fruits—apple, pear, and yellow plum—interwoven with citrus zest, subtle brioche, and a light floral touch. Hints of hazelnut, honey, and chalky minerality often emerge with a bit of air.
The palate is fresh yet satisfyingly vinous, with Pinot Noir providing structure and depth, Chardonnay adding precision and lift, and Pinot Meunier rounding things out with softness and fruit. Flavors of crisp stone and orchard fruits are layered with notes of toasted bread, almond, and a gentle creaminess from extended lees aging. The finish is clean, dry, and persistent, with a fine mineral line. Although designed to be enjoyed on release and ideal as a refined aperitif, this cuvée can gain a touch of complexity with 2–4 additional years of cellaring.
Production
Royale Réserve Brut is rooted in Philipponnat’s historic terroirs around Ay and Mareuil-sur-Ay, where chalky soils and south-facing slopes help Pinot Noir reach excellent ripeness and intensity. The blend is dominated by Pinot Noir, complemented by Chardonnay and Pinot Meunier from carefully selected plots across the Champagne region to bring balance and refinement. Grapes are harvested by hand to ensure careful selection and preserve fruit purity. In the winery, the musts are vinified by parcel, with a portion traditionally fermented in stainless steel to maintain freshness and some base wines often aged in oak to enhance texture and complexity. The final blend includes reserve wines to ensure a consistent house style, followed by a secondary fermentation in bottle and a minimum of three years of aging on the lees before disgorgement, which contributes to its fine mousse, brioche notes, and harmonious structure.

Thanks to its balance of freshness and vinosity, Royale Réserve Brut is wonderfully versatile at the table. It shines as an aperitif with canapés, charcuterie, mild cheeses, and smoked salmon, but also pairs beautifully with white meats such as roast chicken or veal, delicate charcuterie, poultry dishes with light cream sauces, and a wide range of fish and seafood preparations. Serve well-chilled at 8–10°C (46–50°F) to highlight its finesse and aromatic detail. A brief 10–15 minutes in the glass or a wide-bowled flute or white-wine glass is sufficient; decanting is generally not necessary, though opening the bottle a few minutes before serving allows the wine to unfurl its full aromatic complexity.
