Tasting Notes
In the glass, it shows a deep ruby color with attractive mature highlights. The bouquet opens with blackcurrant, dark cherry, and ripe forest berries, layered with cedar, cigar box, tobacco, dried flowers, and subtle spice. With time in the glass, the aromatic profile becomes even more complex, revealing the tertiary nuances that come with graceful bottle age.
On the palate, the wine is silky, balanced, and harmonious, with fruit that remains vivid and precise. The tannins are fully integrated after more than two decades of development, giving the wine a polished texture and impressive length. It finishes with dark berry fruit, spice, and classic Margaux elegance. This is a wine that is drinking beautifully now, while still showing the structure and depth to hold its appeal for some time longer.
Production
Pavillon Rouge is the second wine of Château Margaux, sourced from the estate’s exceptional vineyards in the Margaux appellation of Bordeaux, where gravel-rich soils and a temperate Atlantic climate help Cabernet Sauvignon, Merlot, and Cabernet Franc reach exceptional finesse. The grapes are carefully selected, with harvesting typically done by hand to preserve quality and precision. Vinification follows the estate’s meticulous approach, emphasizing gentle extraction and careful élevage to express purity of fruit, balance, and the refined style associated with the château.
Food & Serving
This wine pairs wonderfully with roast lamb, filet of beef, duck breast, game birds, or mushroom-based dishes, as well as truffle-infused preparations and aged hard cheeses. Serve at around 16–18°C for the best expression of its aromatics and structure. Decanting for 1–2 hours is recommended, especially if served younger in its current mature phase, to allow the bouquet to open fully.
