Tasting Notes
In the glass, Pavie Macquin 2020 shows a deep, opaque ruby-purple hue, signaling both concentration and youth. Swirled in the glass, it opens gradually, releasing pure, vivid aromas of sweet raspberries and black cherries, interwoven with notes of orange zest, violet, crushed herbs, warm spices, bay leaf, and a subtle, graphite-like smokiness.
On the palate, the wine is medium to full-bodied, layered and intense, with a dense, fleshy core of ripe red and dark fruit. The texture is structured yet polished, framed by youthful, chalky tannins that reflect the limestone-rich terroir. Fresh acidity keeps the wine precise and energetic, while savory, spicy and mineral notes linger on a long, focused finish. Still in the early stages of its evolution, this 2020 has excellent aging potential and will reward 8–10+ years of cellaring, continuing to develop complexity over 15–20 years in a good cellar.
Production
Château Pavie Macquin sits on the prized limestone plateau of Saint-Émilion, where vines are rooted in a mix of limestone, clay and chalky soils that naturally produce wines of tension, minerality and structure. The 2020 is typically based on Merlot, supported by Cabernet Franc and a touch of Cabernet Sauvignon, all harvested by hand in small batches to ensure optimal ripeness and selection in the vineyard. In the cellar, the Thienpont team has in recent vintages refined their approach by slightly easing extraction, aiming for greater finesse without sacrificing depth: gentle handling of the fruit, carefully managed fermentations, and élevage in French oak barrels (a proportion new) help shape a wine that is both powerful and finely detailed, clearly expressing its terroir.
Food & Serving
The structure and intensity of Pavie Macquin 2020 make it an excellent partner for richly flavored dishes: think dry-aged ribeye or côte de boeuf, slow-braised lamb shank, roast duck with herbs, or game birds with wild mushrooms. It also pairs beautifully with truffle dishes, hearty lentil stews, and aged hard cheeses such as Comté or Manchego. Serve at 16–18°C, ideally after decanting for 1–2 hours in its youth to allow the tannins to soften and the aromatics to fully open. As it matures, a shorter decant will be sufficient to gently awaken the wine without losing its more delicate nuances.
