Sourced from a single, high-altitude site, this wine combines rich concentration with striking freshness and minerality. The “Mai Dire Mai” (Never Say Never) line has quickly become one of Pasqua’s most iconic expressions, prized for its elegance, complexity and distinctive sense of place.

Tasting Notes
In the glass, the 2015 Mai Dire Mai Amarone shows a deep, opaque ruby color with garnet reflections at the rim, revealing its maturity and intensity. The nose is layered and seductive, with aromas of ripe black cherry, dried plum, and blackberry compote interwoven with notes of fig, cocoa, licorice, tobacco leaf, and dried rose petals, all lifted by a mineral, almost stony edge from the basalt-rich soils. On the palate, this is a full-bodied, richly textured Amarone with velvety tannins and an impressive backbone of acidity that keeps the wine vibrant despite its concentration. Flavors of dark cherry, macerated berries, and candied orange peel meld with hints of espresso, dark chocolate, sweet spices, and a touch of balsamic and Mediterranean herbs. The finish is long, warming and complex, with lingering notes of dried fruits and minerality. 2015 has the structure and balance for extended aging; it will continue to develop tertiary nuances—truffle, leather, and more evolved spice—over the next 10–15 years or longer under good cellar conditions.

Production
The grapes for Mai Dire Mai come exclusively from the 23-hectare Montevegro vineyard, perched at around 350 meters above sea level between Val d’Illasi and Val di Mezzane in the Valpolicella area of Veneto. The terroir is a distinctive mix of basalt and calcareous soils, which imparts both minerality and tension to the richly styled Amarone. Corvina, Corvinone, Oseleta, and Rondinella are hand-harvested at optimal ripeness, with rigorous selection of bunches in the vineyard and winery. Following the traditional appassimento method, the grapes are dried for an extended period to concentrate sugars, flavors, and phenolics before gentle pressing. Fermentation takes place slowly to manage the high extract and potential alcohol, followed by long aging in quality oak (often large barrels and/or tonneaux) to refine tannins and build complexity without overwhelming the fruit. The result is a carefully crafted, single-vineyard Amarone that marries power with precision.

Food & Serving
This Amarone is a natural match for rich, savory dishes such as braised beef, osso buco, slow-cooked lamb shanks, game (venison, wild boar), and aged hard cheeses like Parmigiano Reggiano or mature pecorino. It also works beautifully with truffle dishes, mushroom risotto, and dark chocolate preparations that are not overly sweet. Serve at 18–20°C (64–68°F) for optimal expression. Decanting is strongly recommended—at least 1–2 hours before serving—to allow the wine to fully open up and reveal its aromatic and textural complexity.
