Paolo Cottini Valpolicella Ripasso Classico Superiore 2021 is a refined expression of traditional Ripasso from the heart of historic Valpolicella in Veneto. Crafted from high-altitude vineyards in the Negrar and Valgatara valleys, it balances richness and freshness with impressive finesse. Using the time-honoured Ripasso technique, this wine gains extra depth and complexity from a second fermentation on Amarone skins, delivering a concentrated yet elegant red that stands apart from heavier modern interpretations.
Tasting Notes
In the glass, the 2021 shows a deep ruby core with garnet reflections at the rim, hinting at its concentration and gentle maturation. The nose opens with layers of ripe and dried red fruits – think sour cherry, black cherry and plum – followed by notes of dried figs, sultanas and prune. These fruit tones are interwoven with hints of dark chocolate, espresso, sweet spices and a subtle dried herb complexity typical of classic Valpolicella.
On the palate, it is full-bodied yet poised, with a generous, velvety texture supported by firm, well-shaped tannins. Flavours of cherry compote, baked plum and dried berries are lifted by a streak of freshness from the higher-altitude sites, preventing the wine from feeling heavy. Secondary nuances of cocoa, roasted coffee bean and a touch of vanilla from the oak aging add depth and length. The structure and acidity suggest that, while already approachable, the 2021 has solid aging potential and should develop additional complexity over the next 5–7 years, gaining more tertiary notes of leather, tobacco and dried flowers.
Production
The grapes for Paolo Cottini’s Valpolicella Ripasso Classico Superiore are sourced from two complementary terroirs in the historic Valpolicella Classica zone: Negrar at around 580 meters above sea level with a south-west exposure, and Valgatara at approximately 250 meters with a south-east exposure. The higher, cooler sites preserve acidity and aromatic lift, while the lower, warmer vineyards provide ripeness and body. Vines are trained in the traditional pergola system, and all grapes are carefully hand-harvested to ensure optimal selection. The wine is first produced as a classic Valpolicella, then undergoes the traditional “Ripasso” method, where the young wine is passed over the skins of Amarone, triggering a second fermentation that enriches texture, flavour and alcohol. It is then matured for around 24 months in small used oak barrels, allowing integration of oak influence while preserving the purity of fruit.
Food & Serving
This Ripasso is a natural partner for rich, flavourful dishes such as slow-braised beef, osso buco, lamb shanks, game stews and roasted pork with herbs. It also pairs beautifully with mature hard cheeses like Parmigiano Reggiano, aged Asiago or Pecorino, as well as mushroom risottos and hearty pasta dishes with ragù. Serve at 16–18°C to highlight both the fruit and the spice-driven complexity. A brief decant of 30–45 minutes is recommended to allow the wine to open up fully, soften the tannins and reveal its layers of dried fruit, spice and chocolate.

The Paolo Cottini estate is a relatively young label, founded in 2010 by Paolo and his wife Sara, but it draws on four generations of family experience in Valpolicella. Based in the medieval village of Castelrotto in the San Pietro in Cariano commune, the winery sits in the heart of the Valpolicella Classica area, a historic cradle of some of Italy’s most revered red wines. With vineyards in both the Negrar and Valgatara valleys, Paolo Cottini is able to blend distinct microclimates and altitudes to craft wines of character and balance. The family remains committed to traditional styles for their DOC and DOCG bottlings, including Ripasso and Amarone, while using their IGT range to experiment and express a more personal vision. Their wines have been steadily gaining recognition for offering authentic, terroir-driven Valpolicella with excellent value and a clear sense of place.
