Palmento Costanzo Etna Rosso Contrada Santo Spirito 2021

Palmento Costanzo Contrada Santo Spirito Etna Rosso 2021 is an organic red wine shaped by the dramatic volcanic landscape of Mount Etna. Made from Nerello Mascalese and Nerello Cappuccio, it combines the finesse of old, high-altitude vines with a refined, mineral character and the depth gained from extended maturation in French oak. It is a distinctive expression of Etna’s historic contrade and traditional bush-trained vineyards.

Tasting Notes
The wine displays a vivid ruby-red colour with elegant garnet highlights. Its broad, expressive nose reveals marasca cherries in liqueur, black cherries and fresh tomato leaf, complemented by accents of black pepper and sweet tobacco. On the palate, it is supple and velvety, with gentle tannins, balanced freshness and subtle bois 0e9 notes from its long maturation. The finish is pleasantly spicy and mineral, with the structure and complexity to develop further in bottle over the coming years.

Production
The grapes come from Contrada Santo Spirito on Etna’s northern slopes near Passopisciaro, where up to century-old vines grow at 720 780 metres above sea level. Trained using the traditional alberello method on chestnut stakes, the vines are rooted in deep, stony volcanic sand rich in alkaline and iron-bearing effusive rock. The grapes are hand-harvested selectively in late October, then fermented with indigenous yeasts in tapered oak vats. Following complete malolactic fermentation, the wine matures for 24 months in egg-shaped French oak vessels and rests for a further 18 months in bottle, allowing the oak, fruit and mineral character to integrate.

Food & Serving
Serve at around 16 18C. Its refined tannins and savoury volcanic character make it an excellent match for roast lamb, grilled or braised beef, game, mushroom dishes and pasta with rich tomato or meat sauces. It can be enjoyed immediately after a short 30 60-minute decant, while older bottles may benefit from gentle decanting to separate any natural sediment without overexposing the wine to air.
