Production
Ornellaia 2021 hails from the sun-drenched coastal hills of Bolgheri in Tuscany, where vineyards benefit from a unique maritime influence, well-draining alluvial and sandstone soils, and a mild Mediterranean climate that favors Bordeaux varieties. The estate practices meticulous, plot-by-plot viticulture, with low yields and hand-harvesting to ensure only perfectly ripe, healthy grapes reach the cellar. Each variety and parcel is vinified separately, typically undergoing temperature-controlled fermentation in stainless steel and/or concrete before being transferred to French oak barriques—often with a generous portion of new oak—for malolactic fermentation and extended maturation. After élevage and careful blending of Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot, the wine receives further bottle aging at the estate before release, allowing its power, tannin, and oak to harmonize.

Ornellaia 2021 is best matched with richly flavored, refined dishes that can stand up to its structure and intensity: think Tuscan bistecca alla fiorentina, slow-braised beef short ribs, lamb loin with rosemary and thyme, or game birds with truffle and wild mushrooms.
