Tasting Notes
In the glass, it shows a warm, inviting amber hue. The nose is rounded and expressive, with aromas of caramel, gentle spice, and a subtle touch of smoke that hints at its maritime inspiration. On the palate, the rum is smooth and well balanced, offering layers of sweet caramel, warming spice, and lightly toasted oak. The finish is soft and measured, with enough depth to keep it interesting while remaining easy to enjoy neat or in classic cocktails. While its 40% strength makes it immediately approachable, the blend’s complexity gives it solid appeal as a versatile sipping rum rather than one built for long cellaring.

Production
This blend draws on Old St. Croix’s historic connection to the Danish West Indies, with spirit sourced from respected distilleries across the Caribbean and Central America. Long fermentation and distillation to 85% create a clean, concentrated base, which is then matured in oak casks to develop texture, spice, and gentle wood influence before being adjusted to bottling strength.

Food & Serving
Best served slightly below room temperature, either neat or over a large ice cube to open up the aromatic profile. It pairs well with grilled meats, smoked dishes, dark chocolate, or desserts featuring caramel and toffee; it also works beautifully in a traditional rum and cola or a refined Old Fashioned-style serve. Decanting is not necessary, though a few minutes in the glass will help the aromas unfold.

The brand has become closely associated with the rum heritage of the region and with Riise’s pioneering export success, including a gold medal at the 1893 Chicago World’s Fair. Today, Old St. Croix continues to honor that legacy with blends inspired by history and crafted for modern drinkers.
