Crafted by Adam Tolmach, this is a wine that balances purity, precision, and mineral drive with the gentle depth that has made Bien Nacido one of the state’s most revered single vineyards.

Tasting Notes
In the glass, it shows a pale straw-gold hue. The bouquet opens with citrus blossom, green apple, wet stone, and toasted hazelnut, gradually unfurling into hints of salted butter and ripe citrus as it breathes. On the palate, the wine is taut and focused, combining cool-fruited concentration with a chalky, mineral edge. It finishes long and saline, with excellent freshness and the structure to age gracefully over the next several years, likely gaining further complexity and nutty nuance with time.

Production
The grapes come from older vines in Bien Nacido Vineyard, where the maritime influence of Santa Maria Valley and the limestone-rich soils help shape a Chardonnay of tension and depth. Harvest is done by hand, and the fruit is whole-cluster pressed before spontaneous fermentation in neutral French oak barrels. Full malolactic fermentation, extended lees contact, and around 11 months of maturation in used oak all contribute texture and complexity without masking the vineyard character.

Food & Serving
This Chardonnay pairs beautifully with roast chicken, seared scallops, lobster, grilled sea bass, or creamy risotto, especially dishes with citrus, herbs, or a subtle buttery finish. Serve slightly chilled, around 10–12°C, and consider a short decant if you’d like to open up its layered aromatics.
