Nikolaihof Grüner Veltliner Hefeabzug 2022 is a beautifully pure and quietly complex expression of Wachau Grüner from one of Austria’s most historic estates. Crafted in the traditional “Hefeabzug” style, it’s bottled directly off the fine lees, giving extra texture and depth while preserving remarkable freshness. This cuvée showcases the estate’s biodynamic philosophy and centuries‑old craftsmanship, delivering a white wine that is both effortlessly drinkable and quietly serious.

Tasting Notes
In the glass, the 2022 Hefeabzug shows a pale straw to light lemon color with a silvery-green hue, hinting at its vibrancy and youth. The nose is delicately aromatic rather than showy, with notes of crisp green apple, pear skin, lemon zest, and white pepper, layered with hints of fresh herbs, wet stone, fennel, and a subtle, leesy bread-dough nuance from its time on the lees. On the palate, this Grüner Veltliner is sleek, dry, and finely etched, with a juicy core of citrus and orchard fruit wrapped in a savory, peppery spine. The characteristic Grüner notes of white pepper and a light herbal tone (think lovage and watercress) are supported by chalky, mineral-accented acidity. The lees influence lends a gentle creaminess and a touch more mid-palate weight without sacrificing precision. The finish is clean, salty-mineral, and refreshingly persistent. While it is primarily made for earlier enjoyment over the next 3–5 years, good cellaring conditions can reveal additional complexity and a more pronounced herbal-mineral character with short- to medium-term aging.

Production
The Hefeabzug 2022 comes from organically and biodynamically farmed vineyards in the Wachau, where terraces of primary rock (gneiss and schist) and thin, stony soils give Grüner Veltliner its trademark tension and mineral drive. Nikolaihof has long worked without synthetic chemicals, following Demeter-certified biodynamic practices that emphasize soil health and biodiversity. Grapes are typically harvested by hand to ensure careful selection and gentle handling, often at modest must weights to favor elegance over power. In the cellar, the juice ferments with indigenous yeasts in large, old oak casks. True to the “Hefeabzug” designation, the wine is aged on its fine lees to build texture and aromatic nuance, then drawn directly off the lees and bottled with minimal intervention, resulting in a wine that feels both unadorned and quietly complex.

Food & Serving
This Grüner Veltliner is a versatile food wine that shines with fresh, simply prepared dishes. It pairs beautifully with river fish, shellfish, and seafood (think trout with herbs, steamed mussels, grilled prawns), as well as light poultry, schnitzel, and vegetable-based plates such as asparagus, artichokes, and seasonal salads. Its peppery, herbal streak also suits Asian-inspired cuisine with ginger, lemongrass, or light soy accents, provided the heat is moderate. For ideal enjoyment, serve at around 9–11°C (48–52°F). Decanting is not essential, but a few minutes in the glass allows the wine to open up its more subtle herbal and leesy notes, especially in its youth.
